We are sad to announce that David Siegel will be leaving Belly Timber February 15th, 2010 to travel the world. David’s talent has put Belly Timber on the culinary map in Portland. We are thankful we had the opportunity to work with David and wish him the best of luck in his future endeavors.

We are pleased to announce that Paul Hyman will be assuming the Chef role at Belly Timber. Paul brings many years of culinary experience and talent that is evident on the plate. Paul will begin work at Belly Timber on February 9th, 2010.

Paul’s passion for food arose from his experiences growing up on a small farm outside of New Orleans. Paul’s family loves food! They owned a butcher shop and bakery, grew seasonal crops and made their own wine and cheese.

Paul’s culinary career began with an apprenticeship with French master guild Chef Chris Keringeorgio of La Provence in New Orleans, La. Since then, Paul has worked along side many talented chefs including James Beard Award winners Jamie Shannon, Susan Spicer and Todd English. More recently, Paul worked with Chef David Machado to open Nel Centro. We look forward to working with Paul and are certain he is an excellent fit for Belly Timber. Paul’s menu will debut February 16th, 2010.
