As the festive day approaches, stock up on your favorite Pastaworks stocks/broths. In addition to the usual supplies of beef, chicken and vegetable, the Pastaworks kitchen is also making ample quantities of turkey and pork stock, as well as the ever rich veal demi-glaze and fish fumet.

The Hawthorne and Mississippi stores have a few naturally raised birds awaiting you (all of the “heritage” birds are sold out). Delay not (as if you haven’t already) to secure your choice of size.

The debate continues over whether Thanksgiving is a pasta holiday (in our view every holiday is a pasta holiday), but just in case you wish to substitute for the noble fowl or augment it with noodles instead of piles of potatoes, we recommend Roasted Onion and Goat Cheese Ravioli, Ravioli di Zucca (squash), Ravioli di Funghi (mushrooms) and/or Ravioli di Mele (apple). Pastaworks Gnocchi also make great “tater tots”.
